A difficult crop. A deliberate choice.
Corn is not naturally part of the agricultural tradition we have chosen to follow in Sicily. For XXI SOLI it is not simply purchased: it is grown for our own production on the island.
The variety is chosen for its high starch content and for its destination: distillation. Obtaining the harvest requires agronomic techniques adapted to local conditions and work followed directly, without chemical treatments.
Cultivation keeps a manual, traditional character. The difficulty is not hidden: it becomes part of the identity of MAIS.

Distillation is carried out in deliberately small lots. When the twenty-one-cycle process is complete, the finished distillates are brought together to form one final batch.

XXI SOLI is presented in a 70 cl bottle of clear glass with a natural cork stopper. The label is written in Italian, the language of the island — the sun mark, the expression, the three claims, and the bottle number.
MAIS wears an ivory label with a pale straw tone — the warmest of the three.

One harvest. One thousand bottles.
Every XXI SOLI expression is released in a defined quantity: 1,000 individually numbered bottles. 001/1000. 002/1000. 003/1000. Until the last.
When a harvest ends, that harvest is closed. The number does not merely tell you how many bottles exist. It tells you which one you own.
The passport links the field to the number.
The first price belongs to the beginning. The last belongs to rarity.
The first 500 bottles of each harvest are allocated at an opening price of €555. As fewer bottles remain, the harvest enters successive allocations and the price rises according to a scale defined in advance.
